We are collaborating with an award winning venue in Melbourne, known for its 1 hat (michelin star) standard that is part of one of Australia's best restaurant groups celebrated for pushing the boundaries of dining experiences and boatsa multiple chefs hats across their varied venues.

This particular restaurant, which draws inspiration from the sophisticated ambiance and gastronomic innovation is looking for a highly experienced Pastry Sous Chef. The role demands a professional with a solid background in high-end pastry creation, capable of managing large teams and showcasing comprehensive technical abilities and all-around technical expertise and management skills

Your Role and Responsibilities:

  • Leadership Excellence: Direct and oversee a large pastry team, instilling a culture of excellence, precision, and innovation. You will be responsible for the training, mentoring, and professional development of your team.
  • Innovative Menu Creation: In collaboration with the Executive Chef, develop and refine a pastry menu that aligns with the venue's 1 hat standard or more. Your role will be pivotal in ensuring the delivery of creative, high-quality pastry items that complement the establishment's reputation for culinary innovation.
  • Operational Management: Efficiently manage the day-to-day operations of the pastry section, maintaining the highest standards of quality control and food safety. This includes managing inventory, ordering supplies, and optimising kitchen workflows.
  • Culinary Expertise: Utilise your advanced technical skills to craft exceptional desserts, pastries, and baked goods. Keep abreast of the latest trends in the pastry world, integrating innovative techniques and presentations to maintain the venue's competitive edge.
  • Quality Assurance: Uphold the establishment's high standards for food preparation and presentation, ensuring that each dish meets the venue's exacting 1 hat/Michelin criteria and enhances the guest dining experience.

Qualifications and Experience:

  • Extensive experience in a leadership role within the pastry department of high-end, fine dining establishments, preferably with experience in a 1 hat or similar standard venue.
  • A robust portfolio demonstrating mastery in a wide range of pastry disciplines, including but not limited to, chocolate work, sugar art, and fine pastries.
  • Proven ability to lead, motivate, and develop a large team in a fast-paced environment.
  • Strong operational skills, with a track record of managing inventory, controlling costs, and ensuring compliance with health and safety standards.
  • Culinary arts degree or equivalent professional certification in pastry arts is highly regarded.
  • Minimum 5 Years as a Senior Pastry chef
