OBJECTIVES:
- To assist Head Chef in managing Food COGs, labor cost per your department, overall standards, maintenance, sales, Marketing initiatives, training.
- To strive for the highest practices in the venue and ensure that Guests receive the best possible overall experience.
- To work effectively in a fast-paced environment while displaying excellent organizational and human relations skills.
- To maintain a spotless, immaculate, and fully operational Venue at all times, in particular the Floor and waiters areas.
- To treat our guests like Superstars!
DUTIES:
- Ensure that the venue is fully operational daily, maintenance issues should always be communicated to the appropriate AMC contractor and followed up until completion, with a focus on the floor and waiters areas.
- Ensure that Floor departments are fully staffed.
- Ensure that all waiters, floor support, cleaners and hostesses are consistently trained on company standards, product knowledge and that tests/assessments are recorded.
- Ensure that all Floor and Reception training documents & bibles are up to date.
- Ensure that all floor employees personal files are up to date with all their training documents, tests results and sign-off sheets.
- Conduct an initial interview for any new candidates for your departments and pass any suitable candidates over to the General Manager including line staff or new members of supervisor/management team for the venue.
- Ensure that floor staff par levels are always in line with latest updates on par levels reviewed by GM and Ops Manager.
- Ensure that all cash outs, banking, and money handling is done as per company procedures.
- Spot check PMC on a weekly basis to ensure that batch recipes & wastages are consistently monitored and recorded.
- Ensure that all end of probation reviews are conducted for your department and filed with the H.R department once completed.
- Conduct staff appraisals every 6 months for all floor employees of the venue; appraisal forms to be submitted to the General Manager/Operations Manager for review and signing off before being placed in the staff members personal file.
- Ensure that all floor staff schedules are posted every Wednesday by 6pm for the upcoming week.
- Implement and maintain appropriate Floor cleaning schedules in the venue.
- To spot check the food quality during service hours.
- To be present during special events or large functions in the venue.
- Ensure that the holding stock for food and beverage are always kept to a minimal and on par with the levels set by the Operations/Finance department.
- Review the variance reports for the venue on a weekly basis.
- To develop a strong relationship and good communication with all the departments Solutions Leisure (cost control, I.T, H.R, Finance, Purchasing, etc.)
- Develop & maintain an excellent working relationship with suppliers, contractors & partners involved with your venue.
- Attend weekly management meeting, and action and complete all tasks for your department that were discussed in the meeting(s).
- Attend/organize weekly staff meetings and hold with the entire venue team.
- Attend any meetings requested by Solutions Leisure Senior management team.
- Ensure that the floats given to the venues always balance out and are always ready for auditing.
- Assist the GM in overseeing the security department and the service provided by the contracted company.
- Monitor the performance of the venue through verification and analysis of guest satisfaction systems and financial reports.
- Maintain product and service quality standards by conducting ongoing evaluations and investigating complaints.
- Ensure any suspicious packages or parcels reported to management are assessed and reported without delay to the relevant authorities.
- To act as a positive ambassador for the business.
- Carry out any other reasonable request asked by the General Manager and Directors.
