About the job Mexican Speciality Chef

Responsibilities:

  • Develop, plan, and prepare a diverse range of Mexican dishes, focusing on authenticity and flavor.
  • Develop and curate a Mexican menu that represents the diverse regional flavors of Mexico, taking into account customer preferences and seasonal ingredients.
  • Demonstrate a high degree of Velaas culture and service standards awareness.
  • Ensure consistency in taste, presentation, and portion sizes of Mexican dishes.
  • Collaborate with the executive chef and sous chefs to design seasonal menus and daily specials.
  • Prepare and cook a wide range of Mexican dishes, including tacos, enchiladas, guacamole, etc.
  • Proficiency in grilling, braising, stewing, and using essential Mexican ingredients.


Minimum Requirements:

  • Proven experience as a Specialty Chef, with expertise in Mexican cuisine.
  • Knowledge of Spanish cuisine will be an advantage.
  • Mastery of preparing salsas and sauces.
  • Knowledge to create elegantly designed offerings for high-profile guests.
  • Comfortable with living in remote locations.
  • Good command of written & spoken English.
  • Excellent organizational and multitasking skills & confidence to anticipate and manage processes.
  • Effective interpersonal and communication skills.
  • Food safety certification is preferred.
  • Capability to work efficiently in a fast-paced environment and handle high-pressure situations.
