Backed by one of the biggest conglomerate groups in Indonesia, our customer is building one of the most exciting F&B specialty brands in Surabaya. They are looking for Specialty Coffee Barista to become the ambassador of ultra-premium coffee at Surabaya's most exclusive F&B specialty brand. You'll master 200+ single-origin coffees and deliver theatrical service rituals that turn first-time guests into lifelong connoisseurs.
What you'll do:
- Execute manual brew methods daily (Chemex, Siphon, Turkish ibrik) with laboratory precision.
- Calibrate grinders and espresso machines hourly to maintain dosing accuracy.
- Guide guests through origin storytelling (e.g., Ethiopian Yirgacheffe processing methods) while curating flights.
- Maintain pristine station hygiene with 15-minute cleaning intervals during service.
- Replenish curated pastry pairings (madeleines, canelés) synchronized with brew cycles.
- Track coffee waste by gram and report hourly bean consumption to the head roaster.
- Perform "coffee theatre" tableside service for VIP tables (flambéing spices, live grinding).
- Achieve 90%+ positive feedback on mystery shopper evaluations.
What you'll need:
- 3+ years in specialty coffee (third-wave or luxury restaurants/hotel environments)
- SCA Barista Level 2 certification (or equivalent)
- Portfolio of latte art mastery (tulips, swans, intricate etchings)
- Physical stamina: Lift 20kg coffee sacks, stand for 8-hour shifts
- Fluency in English + Bahasa Indonesia for guest journeys
The ideal candidate will have:
- Sensory hyperfocus: Detect a 0.3s over-extraction by sound/aroma.
- Performance charisma: Transform coffee service into captivating storytelling.
- ️Gram-scale discipline: Weigh every output (grounds, waste, yield).
- Connoisseur intuition: Recommend a Sumatra Mandheling to cut through chocolate soufflé.
- Bonus: Experience with aged/experimental coffees (wine-barrel ferments, anaerobic).
