Backed by one of the biggest conglomerate groups in Indonesia, our customer is building one of the most exciting F&B specialty brands in Surabaya. They are looking for Gastronomy Chef to pioneer their F&B brand with sensory dining experience. Fuse Javanese heritage with modernist techniques (spherification, cryofreezing) for Surabaya's most exclusive chefs counter.

What youll do:

  • Daily prep 50+ molecular components (liquid nitrogen mists, edible soil).
  • Plate 20-course menus with 90-second intervals between guests.
  • Forage weekly with local farmers (rare herbs, heirloom vegetables).
  • Document R&D in gastronomy journal (pH levels, emulsion stability).
  • Direct "theatre kitchen" performances (tableside nitrogen freezing).
  • Optimize waste: Transform fish bones into translucent glass chips.
  • Calibrate water baths hourly (±0.1°C accuracy).

What youll need:

  • 5+ years in high-end restaurants/modernist kitchens
  • Mastery of: Sous-vide, hydrocolloids, dehydration
  • Portfolio: Multi-sensory dish designs
  • Food science background (HACCP Level 4)

The ideal candidate will have:

  • Mad scientist passion: Turn jackfruit into caviar using sodium alginate.
  • Terroir storyteller: Map dishes to specific Sumatran volcanic soils.
  • Performance flair: Explain spherification while pouring liquid at -196°C.
  • Bonus: Worked with ElBulli/BulliPudding alumni.
