About the job F&B Specialty - Gastronomy Chef
Backed by one of the biggest conglomerate groups in Indonesia, our customer is building one of the most exciting F&B specialty brands in Surabaya. They are looking for Gastronomy Chef to pioneer their F&B brand with sensory dining experience. Fuse Javanese heritage with modernist techniques (spherification, cryofreezing) for Surabaya's most exclusive chefs counter.
What youll do:
- Daily prep 50+ molecular components (liquid nitrogen mists, edible soil).
- Plate 20-course menus with 90-second intervals between guests.
- Forage weekly with local farmers (rare herbs, heirloom vegetables).
- Document R&D in gastronomy journal (pH levels, emulsion stability).
- Direct "theatre kitchen" performances (tableside nitrogen freezing).
- Optimize waste: Transform fish bones into translucent glass chips.
- Calibrate water baths hourly (±0.1°C accuracy).
What youll need:
- 5+ years in high-end restaurants/modernist kitchens
- Mastery of: Sous-vide, hydrocolloids, dehydration
- Portfolio: Multi-sensory dish designs
- Food science background (HACCP Level 4)
The ideal candidate will have:
- Mad scientist passion: Turn jackfruit into caviar using sodium alginate.
- ️Terroir storyteller: Map dishes to specific Sumatran volcanic soils.
- Performance flair: Explain spherification while pouring liquid at -196°C.
- Bonus: Worked with ElBulli/BulliPudding alumni.
