Backed by one of the biggest conglomerate groups in Indonesia, our customer is building one of the most exciting F&B specialty brands in Surabaya. They are looking for Pastry Chef to lead pastry innovation. Craft visually stunning, technically flawless creations using rare ingredients while mentoring junior patissiers.

What you'll do:

  • Execute daily production of 15+ signature items (entremets, viennoiserie, plated desserts).
  • Calibrate oven profiles hourly for perfect lamination (croissants, puff pastry).
  • Design 2 seasonal collections/month (e.g., "Javanese Spice Trilogy" with galangal-infused chocolate).
  • Maintain zero-waste practices (repurpose fruit scraps into gelees/coulis).
  • Conduct 11 AM daily tasting sessions with service team (pairing notes, texture analysis).
  • Manage boutique retail displays (macaron towers, cake vitrines) for visual impact.
  • Supervise HACCP protocols: tempering logs, allergen separation, freezer temps.

What you'll need:

  • 5+ years in luxury patisserie (high-end restaurants/hotels/ranked boutiques)
  • Portfolio: Plated desserts, chocolate sculpture, avant-garde viennoiserie
  • Mastery of French techniques + gluten-free/sugar-free adaptations

The ideal candidate will have:

  • Texture whisperer: Diagnose overworked ganache by sheen.
  • Architectural vision: Build 12-layer entremets that hold 24h in Jakarta humidity.
  • Clockwork discipline: Output 300 perfect canelés before 7 AM opening.
