Job Brief
- Work closely with the Culinary Director / Executive Chef and the Director of Food and Beverage to plan menus and work on a very effective flow to ensure all served food and beverages reach
the room in the best possible condition regarding temperature and presentation. - Monitor revenue and expenses and perform detailed analysis of in-room dining financial information.
- Ensure appropriate and efficient coordination and synergy between all front and heart of the house food and beverage operations.
- Actively support the achievement of monthly and yearly goals relating to all service, revenue and cost control KPIs for the food and beverage operation.
- Execute weekly and monthly inventory of in-room dining / F&B outlets.
Effectively support and maintain an environment dedicated to delivering an attentive and personalized dining experience for all guests. - Execute service training with team members throughout the front of the house food and beverage operation.
- Assure high-quality performance of food and beverage team members which is geared towards the resort's maintenance of a reputation for dependable, friendly service with optimum achievement in guest satisfaction scores.
- Delegate authority and assign responsibilities to the food and beverage line team.
- Maintain and relay knowledge of menu items, preparation methods, and wine and spirits.
- Assist in ensuring accurate par levels of inventory, supplies and equipment are maintained within the restaurant outlets.
- Conduct and/or attend briefings and meetings to maintain favorable working relationships among the resorts leadership and employees and promote maximum morale, productivity, and efficiency.

- Oversee all operational and administrative aspects of the in-room dining operation, review service execution and take action to enforce and ensure that the quality control measures, and service delivery standards are met and in line with the resort's luxury service standards.
- Ensure guest preferences / traces and challenges are consistently researched and recorded and, in conjunction with team leaders, develop strategies to enhance the WOW factor for daily in room dining service. Personally monitor and follow through on any requirements of VIP guests who ordered in-room dining.
- Provide in-villa catering and banquet services in liaison with the Culinary, Guest Relations and Sales & Events management teams.
- Ensure guest challenges are appropriately resolved without delay.
- Monitor the quality of food presentation and accuracy of the orders leaving the in-room dining area.
Job Requirements
- A minimum of five (5) years managerial work experience in food and beverage operations or a similar role preferably in a luxury hospitality environment.
- Certification or diploma in Food & Beverage, Business or Hospitality studies is preferred.
- Oral and written proficiency in English.
- Computer literacy with proficiency in Microsoft Office Suite; knowledge of Micros is an asset.
- Adaptable and able to work well under the pressure of meeting production schedules and timelines.
- Display effective time management skills in order to effectively manage multiple priorities.
- Proven leadership, interpersonal and communication skills.
