Position Summary

The Commis Chef – Asian Cuisine supports the kitchen team in the preparation and production of Asian and Nikkei dishes according to KUURU's standards, recipes, and food safety requirements. The role is suitable for a motivated culinary professional with previous experience in Asian cuisine who is eager to develop technical skills within a professional kitchen environment.

Key Responsibilities

  • Assist the Chef de Partie and Demi Chef de Partie with daily kitchen operations.
  • Prepare ingredients and complete mise en place according to production requirements.
  • Assist in preparing Asian and Nikkei dishes according to established recipes and standards.
  • Perform basic food preparation tasks including washing, peeling, cutting, portioning, and marinating ingredients.
  • Assist with the preparation of sauces, dressings, stocks, garnishes, and other kitchen components.
  • Ensure all ingredients are fresh, properly stored, and handled correctly.
  • Follow recipes, cooking methods, portion specifications, and presentation standards.
  • Support the kitchen team during service and ensure orders are prepared efficiently and accurately.
  • Maintain a clean, organized, and hygienic workstation throughout the shift.
  • Follow all food safety, HACCP, health, and hygiene procedures.
  • Properly clean and maintain kitchen equipment, utensils, and work areas.
  • Assist with stock rotation, labeling, and proper food storage.
  • Help minimize food waste through proper preparation and portion control.
  • Follow instructions from senior chefs and support the team whenever required.
  • Assist with opening and closing duties of the assigned kitchen section.
  • Continuously develop knowledge of Asian and Nikkei cooking techniques.

Qualifications & Experience

  • Previous experience as a Commis Chef or similar entry-level culinary position.
  • Previous experience in Asian cuisine is required.
  • Experience in Japanese, Nikkei, Chinese, Thai, Korean, or other Asian cuisines is an advantage.
  • Basic knowledge of Asian ingredients, sauces, seasonings, and cooking techniques.
  • Basic knife skills and food preparation knowledge.
  • Basic understanding of food safety and hygiene standards.
  • Ability to work efficiently in a fast-paced kitchen environment.
  • Good teamwork and communication skills.
  • Willingness to learn and develop culinary skills.
  • Professional attitude, discipline, and strong work ethic.
  • Ability to follow instructions and maintain consistent standards.
