About the job Hygiene Manager
Job Purpose:
Complete responsibility for the highest level of sanitation and hygiene standards in the hotel. To ensure all food served to guests and employees are free of microbiological, chemical and physical contamination, and all work areas conform to minimum requirements set by local health authorities. To ensure the food safety system is in compliance with Banyan Tree Hotel and Resort Food Safety Management System Corporate manual standard.
Key Result Areas:
1. Ensure that the FSMS system is implemented and maintained in accordance to all the policies, procedures
and work instructions established.
2. Report the effectiveness and suitability of the FSMS system to Banyan Tree Hotel and Resorts (BTHR)
management for review to facilitate improvement of the FSMS system.
3. Organize and coordinate the work of FSMS team.
4. Identify and record any problems with regard to products, processes and the FSMS system.
5. Initiate corrective action and control nonconforming products until the deviation or the unsatisfactory
condition regarding food safety has been corrected.
6. Initiate action to prevent the occurrence and recurrence of any non-conformances relating to the product,
process and the FSMS system.
7. Keep up to date with Food Safety Legislation and technological level in the field.
8. Provide supervision, information, training to all food handling staff.
9. Conduct investigation of food borne illness or food contamination.
10. Attends and chairs the FSMS meeting as necessary to assure effectiveness of committee process.
11. Participate and lead the internal audit as per schedule.
12. Conducts and audit as per schedule to ensure supplier meets BTHR minimum food safety standard.
13. To ensure all documents that relate to the proper functioning of the FSMS are controlled for availability
and up-to-date.
