Chef Assistant

Job Responsibilities:

• Accurately prepares and organizes all Galley's work routines as instructed by the Executive Chef. Always maintains timely and accurate data for projects including special request flow, menu copying for galley sections, recipe database maintenance and printing, uniform log maintenance, meal count data input, and others as directed.
• Accurately updates and files all operational records, including blast-chiller logs; knife- and equipmentissue records; meal count sheets; culinary basics (not safety) training records; USPHS methods of handling, production, and storage; and others as directed.
• Always accurately files all Galley and Dish department records (ILO logs, overtime recording, crew rotations and movement, performance appraisals, disciplinary records, requests to shorten/extend, sick notes from the ship's Doctor, uniform return forms, career path application forms, and more) and does so in an appropriate time frame.
• Always accurately prepares and updates the In-Port Manning List, Blue Card and ERO assignment list, Annex F and Annex G forms, and ERO database under the direction of the Executive Chef.
• Takes minutes at the Executive Chef's daily meeting, and presents timely and accurate transcriptions. Always prepares accurate defect chits for submission to the Technical department and updates the default log within an appropriate time frame.
• Always assists in the orientation of joiners, including familiarizing them with the Galley areas and other ship facilities.
• Qualifications:

• Previous work experience in an office management role is strongly preferred
• Must be computer literate and have working knowledge of MS Office, Lotus Notes, and good typing skills.
• Previous work experience in the Galley is preferred but not required
• Command of the English language, both verbal and written
