About the job 1st Commis Butcher
Job Responsibilities:
- Always carries out production in assigned area/station according to Company portion control guidelines, recipes, defrosting schedule, trimming methods, and passenger demand, as instructed by the Chief Butcher/CDP Butcher
- Always adheres to the daily production schedule, under the direction of the Chief Butcher or his representative as required by the itinerary and various outlets supplied.
- Becomes familiar with and understands consumption of the major proteins by group required for daily production; promptly informs CDP Butcher / Chief Butcher of anomalies or unusual trends.
- Always handles and utilizes all materials and goods with the utmost care and demonstrates a commitment to eliminating waste during production.
- Performs all assigned tasks in a cost-efficient manner possible while adhering to the highest quality standards.
- Qualifications:
- Must have completed basic training in Butchery production in a large hotel or cruise ship environment
- Must have at least 2 years of experience in the Butchery with at least 1-year experience as 2nd Commis Butcher
- Must have recent experience in high volume production
- Must have a good grasp of USPHS regulations with the ability to explain concepts
- Command of the English language, both verbal and written
