Job Responsibilities:

  • Provides training and orientation for new-to-vessel / first-contract
  • food waste handling staff as directed by the Food and Beverage Director.
  • Provides continuous training for food waste handling and stewarding department staff including training on environmental, food waste measurement, operation of food waste digesters and hotel compliance policies and procedures.
  • Supervises the food waste handling staff during the measurement, reporting and digester disposal processes to ensure all food waste is properly accounted for and recorded. Identifying, reporting, and rectifying any potential compliance or waste reduction inefficiencies.
  • Supervises and conducts regular inspections of all food-waste generating and segregation areas to ensure company required compliance standards and expectations are met.
  • Always conducts operational briefings with the food waste handling and stewarding staff as directed by the Food & Beverage Director.
  • Always participates in daily meetings with Food and Beverage management and supervisors to discuss the previous day's operational efficiency.
  • Assists the Chief Steward with controlling the Galley and stewarding department manning & berthing plan.
  • Responsible for scheduling and conducting, with the relevant Technical/Deck teams, all machinery space inspections (Food waste tank/grease Traps & Separators) to identify and rectify any non-food findings.
  • Responsible for all compliance in food waste-related signage as governed by GHESS and those provided as internal measures.
  • Verify and follow up on all required filtration for equipment that generates grey water to ensure correct installation and positioning, in addition to verifying that all covers/ filters are securely installed for any drain
  • Assists and supports the Chief Steward with operational Public Health compliance and quality control duties.
  • Responsible for environmental and chemical compliance in all food and beverage and Housekeeping areas.
  • Knows teams role descriptions (new joiners, returning crew, and promoted crew), and communicates clear expectations based on each role description.
  • Observes each crewmembers performance using his or her role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members.
  • Identifies top performers and mentors them for career advancement or promotion.
  • Always collaborates with the Food & Beverage Director in providing constructive, consistent, and complete appraisals to encourage team mates to achieve their highest potential and advance as appropriate.
  • Continually evaluates the performance of teammates, and promptly makes performance improvement recommendations (incl. Performance Improvement Plans) as required by the Food and Beverage Director

  • Provides structured performance feedback to assist the Galley Supervisor and Food & Beverage Director with performance appraisals which are fair and a true reflection of performance.
  • Consistently develops teammates through training, leading by example, teamwork and identifies top performers to provide guidance and support of career progression.

Qualifications:

  • Experience in public health procedures related to Food and Beverage.
  • Good presentation skills (job entails a substantial amount of training/presentations).
  • Understanding of the operational requirements related to Bio Digestors.
  • Previous experience in leading or managing teams.
  • Proficiency in Microsoft Word, Excel, and PowerPoint.
