Job Responsibilities:

  • Provides training and orientation for new-to-vessel / first-contract stewarding staff as directed by the Executive Chef.
  • Provides continuous training for stewarding department staff including training on safety, USPHS, and environmental policies and procedures.
  • Supervises the stewarding staff during the cleaning and sanitizing processes to ensure all dishes are properly cleaned and sanitized at all times.
  • Consistently schedules deep cleaning in addition to everyday cleaning, and ensures that scheduled cleaning always takes place.
  • Always conducts operational briefings with the stewarding staff as directed by the Executive Chef and the F&B Director.
  • Always participates in daily meetings with galley management and supervisors to discuss the previous day's operational efficiency.
  • Assists the Executive Chef with controlling the Galley and stewarding department manning & berthing plan.
  • Supervises cleaning practices in the areas supervised and ensures that Company and USPHS standards set forth in the SERVESAFE manual are always met and maintained.
  • Ensures that all hand- and ware-washing facilities are in good order at all times.
  • Consistently conducts daily galley rounds and takes appropriate action as necessary.
  • Reports findings and corrective actions to the Executive Chef and Food Manager daily, or as issues are noted.
  • Reports equipment defects to the Executive Chef and Food Manager on a daily basis.
  • Ensures proper functioning of equipment within supervised area at all times.
  • Promptly compiles work orders as directed by the Executive Chef and Food Manager.
  • Always closes out completed work orders for repairs carried out satisfactorily.
  • Actively manages consumption of all consumable materials and paper supplies, such as doilies, paper towels, plastic wrap, chemical supplies, cleaningmaterials, etc.
  • Observes each crewmembers performance using his or her role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members.
  • Continually evaluates the performance of stewarding staff, and promptly makes performance improvement recommendations as required by the Executive Chef.
  • Always performs all duties in accordance with applicable policies and procedures, USPHS and Fleet Regulations, and other internal, external, and governmental regulations as directed..
  • Ensures compliance with safe occupational working practices at all times as stipulated in Fleet Regulations and the Company's policies and procedures.
  • Ensures galley cleaning procedures are always conducted in compliance with the agreed environmental objectives.
  • Actively manages water and chemical consumption at all times.
  • Performs all General Emergency Organization duties as directed.
  • Demonstrates commitment to the Company's values, beliefs, goals, and initiatives.
  • Acts as a Company representative and always portrays a positive image of Princess Cruises to all passengers, officers, and crew.
  • Always maintains professional, effective, and motivated working relationships, taking into account differences in cultures, backgrounds, and individual personalities.

Qualifications:

  • Must have thorough knowledge of USPH practices and procedures.
  • Must attend vessel sanitation course and pass with at least 90%.
  • Must have good oral and written command of the English language.
  • Must be experienced in cruise ship industry galley operation.
  • Must be familiar with scientific cleaning and sanitation procedures for the food service industry.
