Senior Ice Carver

Job Responsibilities:

• Always creatively designs and executes fruit and vegetable carvings for decorative displays on platters and buffets; does so in a timely manner.
• Presents informative and entertaining fruit and vegetable carving demonstrations, as listed on the F&E Schedule.
• Continually demonstrates knowledge of new trends and production methods and regularly seeks guidance from the Executive Chef or his/her representative on implementing suggestions.
• Always creatively designs, cuts, carves, and otherwise shapes ice and wax blocks as decorative elements for use in buffet and restaurant presentations and for special functions; does so in a timely manner.
• Collaborates with the Executive Chef on requests for supplies, doing so in an appropriate time frame especially for special occasion preparations.
• Continually demonstrates knowledge of new trends and production methods and regularly seeks guidance from the Executive Chef or his/her representative on implementing suggestions.
• Always demonstrates creativity and efficiency in setting up ice, wax, and vegetable carvings as well as other decorative buffet elements; always removes them from the buffet after service, storing for future use according to guidelines.
• Always produces creative and appropriately themed decorations for holiday events, doing so in a timely manner and within budget guidelines.
• Effectively trains and coaches garde manger crew in artistic presentation methods and coaches them in creatively and efficiently setting up and decorating buffets.
• Always complies with Company, safety, environmental, USPHS, and Fleet regulations.
• Always complies with all ILO 180 standards.
• Performs all General Emergency Response duties as directed in the Emergency Response Organization.

Qualifications:

• High school diploma or equivalent
• Work experience as a kitchen artist, Cook Trainee or Ice Carver in a hotel or cruise ship environment
• Certified forklift operator
• Must be able to communicate in the English language effectively
• Must be a skilled artist including the ability to sketch, and visualize designs in 3D
• Must possess a keen eye for detail
