Job Responsibilities:

  • Responsible for all galley and crew galley operations. Oversees Galley and Crew Galley management during operations to ensure menus are always executed in a manner that is consistent with Company standards.
  • Effectively directs the Provision Master and Food and Beverage Storekeepers in the efficient and economic ordering, preservation, and utilization of provisions.
  • Effectively oversees the Dish department and ensures the Galley Supervisor and his/her staff adhere to cleaning and sanitation standards.
  • Conducts daily meetings with Galley & Crew Galley management to discuss the previous days operational performance and efficiency and upcoming production and events.
  • Ensures that Galley department heads always conduct regular and effective briefings with their respective teams so that Company standards are met.
  • Always actively participates in meetings led by the Food and Beverage Director and Hotel General Manager.
  • Ensures product quality in all food outlets by regularly monitoring tasting panels and inspecting mise en place during preparation periods.
  • Ensures that each Galley staff member always executes his/her responsibilities for the delivery, production, and quality of food products according to Company standards.
  • Always ensures that all passenger complaints regardingmenu delivery are resolved to the passenger's satisfaction.
  • Collaborates with the Hotel Inventory Manager, Food and Beverage team and Galley department to ensure the culinary product is always produced and delivered within budgeted targets.
  • Always ensures that costs, expenditures, and inventory of all Galley operational areas fall within the established budget.
  • Always ensures that food production adheres to meal count and portion control parameters, and Company recipes, and that stock levels comply with budgeted (ROB) targets.
  • Regularly inspects provisions to evaluate quality and quantity, and conducts yield testing of key protein and produce items.
  • Knows Galley & Crew Galley teams role descriptions, delivers them to all team members (new joiners, returning crew, and promoted crew), and communicates clear expectations based on each role description.
  • Promptly completes performance appraisals that are fair, objective, and accurate measurements based on observed behavior.
  • Observes each crewmembers performance using his or her role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members to become the Consummate Host.
  • Identifies top performers and mentors themfor career advancement or promotion.
  • Continually trains and / or directs training for staff in correct productionmethods and skills, culinary techniques,menu and recipe knowledge, product holding techniques, and presentation and delivery of the product.
  • Ensures appropriate training and orientation is provided to new-to- vessel / first contract Galley staff.
  • Provides constructive, consistent, and complete Performance Improvement Plans as needed to encourage Galley & Crew Galley staff to achieve their highest potential and advance as appropriate.
  • Trains Chef Assistant in Galley administration procedures to maximize his/her effectiveness; regularly reviews his/her progress.
  • Effectively manages Galley manning and berthing.
  • Regularly makes professional and visible appearances in all food outlets and public areas during each voyage.
  • Conducts informative and entertaining culinary demonstrations as directed.
  • Always provides in-depth information about the product and its preparation as well as gracious service as the Consummate Host for Chef's Table events.
  • Always provides an informative and entertaining presentation during the Ultimate Ship Tour.
  • Always ensures menu options are available for passengers with special dietary requirements / requests, and advises passengers when possible.
  • Always formulates practical and creative plans for upcoming cruises and significant events (repositioning cruises, holiday events, etc.), effectively collaborating with department managers and Food and Beverage team members and producing plans within a useful time frame.
  • Always prepares and delivers an accurate and timely demand forecast for food consumption based on meal count information.
  • Always actively contributes to preparing and finalizing accurate plans and quantities for local and container provisioning; does so in a meaningful time frame to prevent shortages.
  • Takes an active role in the formulation and implementation of Food and Beverage improvement strategies as directed by the Food and Beverage Director / shoreside operational group.
  • Always anticipates and plans for Galley management rotational requests and communicates them to the shoreside operational group via the Food and Beverage Director and Crew Office in a timely fashion.
  • Always ensures Galley & Crew Galley staff's compliance with Company, safety, environmental, USPHS, and Fleet regulations.
  • Always ensures compliance with all ILO 180 standards and accurate recordkeeping.
  • Performs all General Emergency Response duties as directed in the Emergency Response Organization.
  • Always assists in the coordination of onboard resources and responses when sanitation levels are raised during outbreaks.
  • Always assists management in scheduling and ensuring attendance at safety and compliance-relatedmeetings / training.
  • Verifies that all equipment is maintained in a manner compliant with Company policies.

Qualifications:

  • B.A. in Culinary Arts, Professional Chefs or vocational school diploma or equivalent
  • 15+ Years experience in culinary/food and beverage management positions
  • 3+ Years in a senior food and beverage position within the cruise industry is preferred
  • 'Strong background in Food & Beverage Operations Management, including planning, production, materials management, distribution & logistics and quality assurance of all food related commodities
  • Effective communicator
  • Strong financial understanding
  • Ability to manage multi-cultural teams
  • Must be fluent in English language
