Role Introduction:

The Chef de Partie - Sports Bar is responsible for overseeing the efficient and high-quality food production in the large sports bar at Kai Tak Sports Park. This role will be involved in all aspects of culinary operations, including menu planning, food preparation, cooking, inventory management, and adherence to food safety regulations. The Sports Bar caters to a wide range of customers, from sports fans to families, and requires a versatile approach to menu offerings and service.

Key Responsibilities:

  • Assist the Executive Chef in managing the daily operations of the Sports Bar kitchen, ensuring smooth and efficient food production
  • Collaborate with the Executive Chef to develop creative and innovative menu items for the Sports Bar, analyzing recipes and determining appropriate pricing
  • Oversee the preparation and presentation of a diverse range of food items, including pub classics, comfort foods, international buffets and healthy options, to cater to the varied customer base
  • Monitor and maintain food costs and inventory levels, implementing strategies to minimize waste and maximize efficiency
  • Ensure compliance with local food regulations and the company's HACCP and ISO22000 requirements, upholding high standards of food quality, hygiene, and safety
  • Supervise and train kitchen staff, including casual cooks, commis, and helpers, to ensure efficient and consistent food production
  • Assist in the development and implementation of HACCP and ISO22000 certification processes, ensuring adherence to food safety standards
  • Collaborate with other departments, such as Chinese kitchen, Catering, Operations, Retail Concessions, Food Safety, and Stewarding, to ensure seamless operations and coordinated efforts
  • Stay informed about food and industry trends, sharing insights and recommendations with the Executive Chef
  • Perform regular inspections of kitchen equipment and facilities, ensuring cleanliness and prompt maintenance
  • Assist in the preparation and distribution of kitchen reports, as directed by the Executive Chef
  • Perform other duties as assigned by the Executive Chef

Requirements:

  • Diploma in Culinary Arts or a related field
  • Minimum of 5 years of experience in the F&B industry, with at least 3 years in a high-volume sports bar or similar fast-paced food service environment
  • Strong knowledge and working experience in a wide range of cuisines, including pub classics, comfort foods, international buffets and healthy options
  • Familiarity with the Prep-Chill-Cook-Serve (PCCS) method
  • HACCP certification and experience in implementing food safety standards
  • Excellent customer service skills and the ability to work collaboratively with staff members
  • Results-oriented with a track record of meeting budgetary goals
  • Exceptional organizational, planning, communication, and interpersonal skills
  • Ability to multitask and prioritize tasks effectively
  • Creative approach to food presentation while maintaining quality standards
  • Flexibility to work evenings, weekends, and holidays, as required by the Sports Bar schedule
  • Proficiency in spoken and written Chinese/Cantonese and spoken English
