Role Introduction

The Overnight Kitchen Cleaner is responsible for all overnight cleaning responsibilities to ensure the cleanliness of the bars, kitchens & concessions after operation. He/She is the shifts where all deep cleaning and heavy work is conducted. Ensuring the kitchens, bars & concessions are cleaned and sanitized according to the company standards. He/She needs to communicate with day shift team members and culinary team for the daily cleaning arrangements.

Key Responsibilities

  • Maintaining the daily stewarding operations through providing excellent services to keep all functional areas, equipment and utensils are cleaned by following the cleaning schedules and/or instructions of superior ensuring meeting the sanitation standards as per the company's policy and HACCP guidelines.
  • Oversee and manage the full scope and operation of the stewarding department, including deep cleaning of the bars, kitchens & concessions.
  • Ensure the trash are cleared and all floors are sweep, cleaned and sanitized properly.
  • Ensure all the stainless-steel surface of kitchen equipment is cleaned and wiped.
  • Follow all required safety and standard operating procedures.
  • May required to work for overtime to assist the dish/pot washing during the big event days.
  • Able to work independently and work closely with supervisor and teammates for completing the daily cleaning task accordingly, or without the supervision of superior.
  • Ensure there is no damage or breakage of kitchen equipment during the cleaning.
  • Always maintaining cleanliness of the tools and equipment.
  • Always switch off the light and equipment after cleaning.
  • Carrying out weekly and periodical cleaning as per schedules for kitchen equipment especially for high-risk items, hydro-vent, fridges, shelves and cabinets.
  • Following up the recycling management system in the stadium.
  • Perform any other related duties as and when assigned by superior.
  • Establish and maintain effective communication channels with other teams, including Catering, Operations, and Retail Concessions.

Requirements

  • At least 2-3 years relevant experience in overnight kitchen cleaning in F&B industries.
  • Basic Hygiene knowledge.
  • Familiarity with relevant food safety, HACCP and ISO22000 regulations and certifications.
  • Knowledge in operating the cleaning machines and all kitchen equipment.
  • Knowledge on chemical usage.
  • Good communication skills with colleagues.
  • Strong work safety knowledge.
  • Intense passion for service excellence and high service standards.
  • Flexibility to work in a fast-paced, dynamic environment.
