Role Introduction
To support the Manager - Stewarding to oversee the stewarding department and ensuring efficient operations related to cleaning, storing, and accounting for a large inventory of chinaware, glassware, and buffetware. He/she needs to ensure the cleaners are providing excellent cleaning, hygiene and maintenance services throughout all kitchen areas, receiving area and concessions according established standards. He/She needs to collaborate closely with other departments to support the overall catering operations of the Main Stadium.
Key Responsibilities
- Leading the team to perform regular cleaning and maintenance functions throughout Kai Tak Sports Park.
- Overseeing the work of overnight team for deep cleaning in back-of-the-house of kitchen areas, receiving area and concessions.
- Ensuring proper use and maintenance of chemicals, tools and equipment and that the services provided meeting all health and safety-related regulations and the KTSPs sanitation standards.
- Maintaining effective communication within stewarding and other departments.
- Maintaining a daily log showing assignments and notation on repair & maintenance items and special cleaning requirements that should be brought to the attention of the manager.
- Reporting any maintenance deficiencies to concerned departments and calling for Assets & Facilities Department as required.
- Implementing the preventive cleaning programs for the kitchen area, receiving and garbage chamber; keeping proper records and files on all maintenance equipment.
- Controlling all equipment and supplies issuance and returns.
- Maintaining PAR stock for all cleaning supplies.
- Conducting daily inspection ensuring that all equipment is always maintained in good working condition.
- Taking inventory of all chemicals, supplies and equipment monthly according to the established guidelines.
- Account for and maintain a large inventory of chinaware, glassware, and buffetware.
- Conduct quarterly/annual inventory
- Implement inventory control measures and training to ensure accurate tracking, minimize breakage, and prevent loss.
- Co-ordinating the scheduling of part-time staff according to operational needs.
- Orienting, coaching and training newly employed cleaner ensuring that they understand the codes of practices and managements expectations; supervising them to ensure that they complete the jobs on time and in line with established standards.
- Monitoring staffs attendance to ensure their punctuality.
- Maintaining a positive team atmosphere among team members.
- Motivating the team member to achieve a higher level of performance.
- Leading and recording all pest control monthly services and ad-hoc cases and report to manager
- Handling the operating equipment requisition requests from service team / culinary team.
- Communicating with banquet chefs / service team for all the events operating equipment and prepare in advance.
- Ensure compliance with food safety regulations, including HACCP, ISO22000 and local regulatory standards.
- Perform any other related duties as and when assigned by superior.
- Overnight shift is required due to operation needs.
- Positive attitude for the daily job task and even facing huge changes.
Requirements
- At least 2 years relevant experience as stewarding supervisor position in F&B industries, with experience in similar position is a definite advantage.
- Good Hygiene knowledge.
- Knowledge in operating dishwashing, potwashing and cleaning machines.
- Knowledge on chemical usage.
- Good communication skills with colleagues.
- Creative and innovative.

- 領導和記錄每天的害蟲控制服務和臨時案件,並向經理報告。
