Primary responsibilities:

• Controlling daily bar stock levels and verifying physical stocks vs. sales Includes beer, liquor, beverages and tobacco.
• Monitoring of market prices vs. Company's suppliers prices of all Food and other ingredients.
• Monitoring daily food and beverage cost of sales, profit margins and reporting through flash report.
• Item transferred with in inter departments & managing expired stocks. (Beverage to food, food to beverages)
• Reconcile C.M.C issues in the system
• Menu item costing and create in the system and linked items along with strong control of food cost.
• Banquet Menus costing and item linked in the system.
• Reconciled bar to bar transfers in the system.
• Post costing of functions
• Consumption analysis of F&B items of restaurant
• Monthly kitchen inventory taking
• Checking the F&B good received notes along with supplier invoices.
• Monitoring and controlling slow moving and short expiry items
• Controlling of general inventory items and fuel stock

Secondary responsibilities:

• Preparing Banquet sales analyst report
• Cost Control efficiency and monitor daily Cost of sales ratio achieved & Budgeted.
• Conducting daily Yield testing
• Monitoring F & B Margin minimum to 50%.
