Cheese Maker for International Cuisine Restaurant

Our client, a renowned international cuisine restaurant known for its exquisite flavors, is seeking a skilled and passionate Cheese Maker to join their culinary team. As a Cheese Maker, you will play a crucial role in crafting unique cheese selections that complement and elevate our global dishes.

Responsibilities:

  • Cheese Production:
  •  Develop and experiment with cheese recipes that integrate with the restaurant's international menu themes.
  •  Create small-batch cheeses using high-quality ingredients and traditional or innovative techniques.
  •  Monitor and control the cheese-making process, ensuring optimal curdling, pressing, and aging for desired textures and flavors.
    •  Conduct regular sensory evaluations to assess the appearance, aroma, taste, and texture of cheeses.
    •  Identify and address any quality issues promptly.
    •  Maintain meticulous records of cheese production and ensure consistent quality across batches.
      •  Manage inventory of cheesemaking supplies, including milk, cultures, rennet, and molds.
      • Place timely orders for necessary ingredients to avoid shortages.
      • Maintain accurate records of inventory usage and costs.
      •  Collaborate with chefs and culinary staff to understand menu needs and recommend cheese pairings for various dishes.
      •  Conduct cheese tasting sessions for staff to enhance their knowledge and appreciation of cheese varieties.
        •  Stay up-to-date on the latest cheesemaking trends and techniques used in international cuisines.
        •  Participate in workshops or conferences to expand your cheesemaking knowledge and repertoire.

        Qualifications:

        • Preferred: Previous experience in cheesemaking or a related culinary field (dairy, fermentation)
        •  Required:  Strong understanding of food safety practices and regulations
        •  Ability to follow recipes and adapt them to create unique cheese varieties
        •  Keen attention to detail and commitment to crafting exceptional cheeses
        •  Ability to work independently and collaboratively in a fast-paced kitchen environment
        •  Physical stamina for tasks involving lifting, standing for extended periods, and maintaining a clean work area
        •  Passion for cheese and a desire to explore international cheesemaking styles
        •  High school diploma or equivalent
