Job Description – Pastry Chef
Position Summary
The Pastry Chef is responsible for the preparation, production, presentation, and quality of all pastry and dessert items within the hotel. The role ensures that pastries, cakes, desserts, breads, and other pastry products are prepared according to established recipes, quality standards, and presentation requirements while maintaining high standards of food safety, hygiene, and cleanliness.
Key Responsibilities
- Prepare and produce a variety of pastries, cakes, desserts, breads, creams, fillings, sauces, and other pastry products.
- Follow approved recipes, portion sizes, preparation methods, and presentation standards.
- Plan and organize daily pastry production and mise en place according to operational requirements.
- Ensure all pastry and dessert items are prepared and presented with consistent quality, taste, texture, and appearance.
- Decorate and finish cakes, pastries, desserts, and other products according to hotel standards.
- Prepare pastry and dessert items for restaurants, buffets, banquets, events, and special functions.
- Check the quality and freshness of ingredients before and during production.
- Ensure proper storage, labeling, dating, and rotation of pastry ingredients and prepared products.
- Monitor stock levels and communicate ingredient requirements to the relevant supervisor.
- Minimize food waste through proper production planning, portion control, and appropriate storage of ingredients.
- Maintain cleanliness and organization of pastry preparation areas, equipment, utensils, refrigerators, and storage areas.
- Follow HACCP, food safety, hygiene, and sanitation standards at all times.
- Ensure all ingredients and prepared products are handled and stored safely and correctly.
- Operate pastry equipment safely and report any damaged or malfunctioning equipment to the relevant supervisor.
- Assist with the development and introduction of new pastry products, desserts, and presentations when required.
- Support and guide Commis Chefs and other junior pastry team members in daily preparation and production.
- Ensure that assigned pastry production is completed accurately and within the required time.
- Maintain a clean, organized, and efficient working environment within the pastry section.
- Coordinate with F&B, Stewarding, Banquets, and other relevant departments to ensure smooth pastry operations.
- Assist with special events, promotions, and other hotel activities requiring pastry and dessert production.
- Follow hotel policies, procedures, grooming standards, and health and safety requirements.
- Perform any other duties assigned by the supervisor or management.
Requirements
- Previous experience as a Pastry Chef or in a similar pastry position, preferably in a 5-star hotel or international hospitality environment.
- Good knowledge of pastry, baking, dessert preparation, and decoration techniques.
- Good knowledge of food safety, hygiene, and HACCP standards.
- Ability to follow recipes and maintain consistency in quality, taste, and presentation.
- Good knowledge of pastry ingredients, equipment, and production methods.
- Ability to work efficiently under pressure and meet production deadlines.
- Good creativity and attention to detail, particularly in pastry presentation and decoration.
- Good communication and teamwork skills.
- Good organizational and time-management skills.
- Flexible to work early mornings, evenings, weekends, and holidays when required.
- Good command of English; additional languages are an advantage.
