Overview

We are seeking a highly motivated and experienced Director of F&B to join the team of our client.

As the Director of Food & Beverage, you will be responsible for overseeing all aspects of the F&B department withing the hotel.

The location is on an island: Sardinia

Key Responsibilities

Project Management

  • Lead the creation of the F&B concept for the entire resort, working with the Culinary Chef, the hotel's Management, taking into account the Group vision and the local specificities and market opportunities.
  • In accordance with the defined concept/s, and progressively review the identity of each venue by setting up new service standards, menus and art de la table during the white label operation and for the Brand  reflagging
  • Be the main operations lead during renovation and construction works for all matters pertaining to F&B design - kitchen, BOH areas, flows, etc. and the sourcing of all relevant FF&E and OS&E


General F&B operations

  • Ensure the profitability, efficiency and creativity in each Food and Beverage outlet including banquet functions, outside catering events and in-room dining.
  • Maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Hotel's standards.
  • Partner with Sales & Marketing to increase exposure and coverage of the Food & Beverage outlets in various local and international media.
  • Approve menus, prices and promotional events for all Food & Beverage outlets in order to maximize revenue generating opportunities.
  • Analyze and control food and beverage cost in order to achieve financial targets.
  • Identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, direct guest feedback and guest incident reports, and formulate action plans.
  • To encourage proactive, efficient and effective inter-departmental communication in order to promote a climate of teamwork and enthusiasm.
  • To ensure customer satisfaction from arrival to departure in accordance to standards, policies and procedures, and Leading Quality Assurance (LQA).
  • To conduct and assist colleagues counseling and disciplinary procedures in accordance with Hotel's procedures.
  • To ensure that Hotel's grooming and appearance standards are implemented and maintained to reflect an image of professionalism and care.
  • Stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation.
  • To ensure appraisals are carried out as per the company's standards.
  • To ensure that the health and safety company standards are maintained and carried out.
  • To develop and implement and maintain the Standard Operating Procedures for the Division.
  • Meet and greet VIPs and influential clients and ensure there is follow-up on all discussed details.
  • Play a dynamic role in daily guest contact and contribute to the guest experience in an active way.
  • Be part of the Executive Committee team and provide advice and support in decisions and projects relating to the entire hotel.
  • To liaise with the Learning and Development Manager on departmental learning and development needs.
  • Perform any other reasonable duties as required by the General Manager from time to time
