Description of Responsibilities:

  • Verify and organize the operation of the butcher and fish cuts, designating activities to butchers and assistants, reporting with the objective of having quality products in stock.
  • Ensure the correct portioning of meat, fish and poultry according to the requirements of each consumption center.
  • Support the day's operation derived from the briefing instruction.
  • Coordinate activities with available staff, planning and organizing timely deliveries during opening hours.
  • Maintain strict control of equipment, tools and products for the operation.
  • Report to the Chef Butcher any anomalies in the different shifts for follow-up.
  • Maintains the supply and operation of the services in the different kitchens.
