Our client, an ultra‑luxury 5‑star resort in Bali, is seeking a highly skilled and passionate Pastry Chef to lead all pastry operations across multiple dining venues. The ideal candidate will bring exceptional creativity, technical mastery, and a deep commitment to quality, ensuring world‑class pastry experiences that reflect the resort's refined standards. This role offers the opportunity to lead and inspire a talented team while upholding excellence in flavour, presentation, consistency, and operational performance.

Requirements:

  • Culinary education or professional pastry qualifications are mandatory.
  • Proven experience in a similar Pastry Chef role within a luxury 5* hotel, resort, or high-end dining environment.
  • Strong knowledge of pastry arts, baking techniques, and dessert presentation.
  • Thorough understanding of food safety, hygiene, and HACCP standards.
  • Ability to work effectively in a multicultural and fast-paced environment.
  • Strong leadership and interpersonal skills, with the ability to foster positive working relationships and develop team members.
  • Excellent organisational and time management abilities.
  • Strong problem-solving skills and the ability to remain composed under pressure.
  • Excellent verbal and written communication skills.
  • Demonstrate professionalism, integrity, and a high level of confidentiality.

Key Responsibilities:

Culinary Operations

  • Oversee and manage the day-to-day pastry kitchen operations to ensure efficiency and consistency.
  • Maintain the highest standards of product quality, presentation, and guest satisfaction across all outlets.
  • Support the development and implementation of menus, seasonal offerings, and speciality desserts.
  • Ensure effective inventory management, food storage, and cost control practices to maximise profitability.

Quality and Food Safety

  • Ensure all pastry products are prepared in accordance with established quality standards and recipes.
  • Implement and uphold HACCP principles and all food safety and sanitation regulations.
  • Maintain familiarity with safety, fire prevention, and emergency procedures to ensure a safe working environment.

Financial and Administrative Management

  • Assist in managing budgets, monitoring food costs, and controlling operational expenses.
  • Support payroll verification and ensure efficient utilization of resources.
  • Maintain accurate records and ensure proper organization of kitchen operations.

Team Leadership and Development

  • Foster a collaborative and positive work environment within the pastry team.
  • Build and maintain strong working relationships with colleagues across departments.
  • Provide guidance, training, and support to team members to encourage continuous development and operational excellence.

Guest Experience and Innovation

  • Drive creativity and innovation in pastry offerings while ensuring alignment with the property's culinary standards.
