Our client, a pre-opening international restaurant in Uluwatu that is specialised in Greek and Mediterranean cuisine, is seeking an experienced Pastry Chef to assist the Executive Chef in leading and managing the pastry production.

This role is responsible for overseeing daily pastry operations, crafting innovative menus, and maintaining top-tier food quality and presentation. It also involves leading and training the pastry team while ensuring adherence to health and safety regulations.

Requirements

  • A minimum of five years of experience in pastry, preferably in a high-volume or upscale setting for international brands. 
  • Exceptional pastry and baking skills with a supported portfolio.
  • Strong knowledge of food safety and hygiene.
  • Excellent leadership and communication skills.
  • Ability to work well under pressure.
  • Experience in menu development.
  • Experience in a pre-opening team is a plus.

Key Responsibilities

  • Oversee daily operations of the pastry section.
  • Conducting trial runs, tasting sessions, and refining recipes before the grand opening.
  • Setting up stock levels, storage systems, and ordering processes.
  • Working closely with the Executive Chef and other departments to integrate pastry offerings into the overall menu.
  • Establishing standards for taste, texture, and presentation of all pastry items.
  • Assisting in the layout and organisation of the pastry kitchen, including selecting equipment and tools.
  • Hiring and training pastry team members to ensure consistency and efficiency.
  • Designing and testing pastry and dessert recipes that align with the restaurants' concept.
  • Ensure compliance with health and safety regulations.
