Our client, a prestigious 5-star international luxury beachfront retreat in Mauritius surrounded by a majestic mountain backdrop, is actively seeking a dynamic, strategic, and visionary Culinary Director to elevate the resort's multi-venue gastronomic identity to world-class standards.

In this key executive role, you will define the culinary vision, menu innovation, and kitchen operations across all dining outlets, signature restaurants, and high-end private dining experiences. The ideal candidate brings a distinguished background in ultra-luxury hospitality and fine dining (Michelin-starred or Michelin Key standards), with the ability to blend global culinary trends with local sustainable sourcing, crafting unforgettable epicurean journeys for discerning international guests.

Key Requirements:

  • Minimum 2 years of senior culinary leadership (Director of Culinary, or Executive Chef) in recognised 5-star ultra-luxury resorts, Michelin-starred outlets, or world-class luxury dining brands.
  • Deep expertise in high-end culinary arts, modern techniques, sustainable luxury gastronomy, and farm-to-table/sea-to-table concepts tailored to luxury travellers.
  • Strong capability in menu engineering, food cost control, kitchen P&L management, labor optimization, and inventory precision.
  • Proven ability to lead, upskill, and inspire multicultural kitchen teams, cultivating a culture of passion, precision, and operational excellence.
  • Strong collaborative skills with the F&B and Front-of-House leadership to ensure seamless integration between culinary execution and service delivery.
  • Prior experience in luxury remote/island destinations (Indian Ocean, Caribbean, SE Asia, etc.) 
  • Familiarity with international import logistics.
  • Fluency in English is required; knowledge of French or Creoles is a strong advantage.

Key Responsibilities:

  • Lead and execute the overall strategic direction of all culinary outlets (fine-dining, beachfront grills, modern lounges, in-villa dining, and bespoke private events).
  • Maintain and elevate the resort's reputation as a top-tier dining destination, creating signature concepts that align with Michelin-level guest expectations.
  • Monitor operational metrics, manage food and labor costs, and streamline kitchen efficiencies to drive bottom-line profitability without compromising luxury quality.
  • Build strategic partnerships with local organic farmers, artisanal producers, and sustainable fisheries in Mauritius while optimizing international luxury imports.
  • Oversee kitchen recruitment, continuous culinary training, performance management, and strict compliance with global HACCP, health, and sanitation protocols.
  • Partner with Marketing & PR to host guest chef pop-ups, wine-pairing dinners, and culinary masterclasses, enhancing brand prestige and market visibility.
