Reporting line: Director of Food & Beverage

Our client is a luxury 5-star international hotel in Port Moresby, Papua New Guinea. They are seeking a creative and dynamic Beverage Manager with strong expertise in mixology, bar operations, and entertainment-driven concepts to oversee all beverage programs, enhance guest experiences across multiple bar venues, and drive the development of innovative cocktail offerings, while leading, mentoring, and building a high-performing bar team.

Notes: package includes full relocation support, visa, three-year contract with bonus, accommodation and duty meals (6-day work week).

Requirements:

  • Proven managerial experience in bar and beverage operations within 5-star hotels or luxury hospitality environments
  • Experience working in remote destinations or cruise lines is an advantage
  • High‑level leadership capability to manage teams and operations in challenging locations or environments
  • Strong expertise in mixology and innovative cocktail development
  • Demonstrated experience managing high-volume venues with entertainment-driven concepts
  • Proven track record in developing and implementing creative beverage programs
  • Strong leadership skills with the ability to train, mentor, and develop bar teams
  • Hands-on, detail-oriented, and operationally driven
  • Excellent command of English (spoken and written)
  • International experience is an advantage
  • Available for a three-year contract

Key Responsibilities:

  • Lead and manage all bar and beverage operations across multiple outlets (lobby bar, pool bar, sports bar, fine dining outlets, etc.)
  • Develop and implement creative mixology programs, cocktail menus, and beverage concepts
  • Elevate guest experience through entertainment-driven bar concepts (especially in sports bar and lounge environments)
  • Oversee beverage costing, inventory control, and supplier management
  • Ensure consistency and quality of all beverages served
  • Train and mentor bar teams on mixology techniques, service standards, and upselling
  • Support pre-opening setup of bar concepts and beverage programs
  • Collaborate with marketing and events teams to create engaging bar activations and promotions
  • Maintain compliance with hygiene, safety, and alcohol service regulations
