Our client is a globally recognised operator of 5-star luxury integrated resorts, renowned for delivering exceptional hospitality and entertainment experiences. They are currently seeking an experienced Sake Sommelier to curate and manage world-class sake and wine programs, deliver exceptional beverage experiences, and provide expert guidance and personalised recommendations to guests while upholding the highest standards of service excellence.

Requirements:

  • Minimum of five years of professional sommelier experience within luxury hotels, Michelin-starred establishments, or upscale Japanese restaurant environments.
  • Proven track record in managing sophisticated wine programs and delivering exceptional guest experiences during high-volume service periods.
  • Knowledge of Japanese cuisine and sake.
  • Fluency in English and/or Mandarin is essential; Japanese language proficiency would be an advantage.
  • Extensive knowledge of global wine regions, varietals, vintages, appellations, terroir, and current industry trends.
  • Advanced expertise in wine service techniques, including decanting, blind tasting, large-format bottle service, and cellar management.
  • Strong experience in inventory control, cost management, stock rotation, and wine pairing development.
  • Background in Michelin-starred or high-end luxury establishments is highly preferred.
  • Proven leadership capabilities, with experience in training and mentoring front-of-house teams.
  • Excellent communication and storytelling skills, with the ability to engage guests and provide memorable wine experiences.

Key Responsibilities:

  • Curate and manage the wine and sake program, ensuring alignment with the venue's culinary direction and guest preferences.
  • Deliver exceptional sake and wine service and provide personalised recommendations to enhance the overall dining experience.
  • Guide guests through complex sake and wine selections with confidence, expertise, and engaging tableside storytelling.
  • Oversee sake and wine inventory, cellar organisation, stock rotation, and cost management to maintain operational efficiency.
  • Ensure proper storage conditions and uphold the highest standards of sake and wine service, including decanting and large-format bottle service.
  • Develop seasonal sake and wine pairings and tasting menu recommendations in collaboration with the culinary team.
  • Maintain comprehensive knowledge of global sake and wine regions, vintages, varietals, and emerging industry trends.
  • Lead and mentor junior team members through structured training sessions, pre-service tastings, and continuous development initiatives.
  • Ensure adherence to beverage standards and foster a culture of service excellence across the front-of-house team.
  • Collaborate effectively with multicultural teams to deliver memorable and seamless guest experiences.
