Purpose of Position:

  • Ensures efficient food and beverage (F&B) operations, maintaining high production, quality, and guest-service standards in accordance with Vikings STAR Service Standards.
  • Implements and maintains all service standards as determined by the Corporate Office, providing ongoing training and support to the team.
  • Creates a friendly, guest-oriented service culture to enhance guest satisfaction and repeat business, contributing to increased revenue and profitability.

Responsibilities:

  • Organize and execute F&B-related ship functions and special events; conduct daily menu presentations with the Executive Chef.
  • Estimate and plan consumption, ordering, and inventory management, ensuring cost control and financial efficiency.
  • Conduct monthly inventories and create accurate quarterly orders, ensuring par-level stock.
  • Organize and oversee restaurant opening & closing routines, adjusting service hours based on guest needs.
  • Ensure strict adherence to Vikings STAR Service Standards, identifying opportunities for service improvement.
  • Greet and welcome guests, ensuring their comfort and well-being during service.
  • Minimize equipment loss/damage and ensure compliance with Public Health Policies and sanitation guidelines.
  • Be familiar with Human Resources policies, including crew contracts, work schedules, and payroll procedures.
  • Lead and support a multi-cultural team, maximizing crew satisfaction, productivity, and retention.
  • Conduct daily team meetings ("The Daily Reunion"), ensuring alignment with operational goals.
  • Ensure mise-en-place is ready 15 minutes before service.
  • Oversee service flow, ensuring smooth operations during embarkation, disembarkation, and sea day activities.
  • Identify and mentor potential leaders within the team, fostering a culture of ownership and responsibility.
  • Conduct performance reviews, training, and succession planning, ensuring compliance with Maritime Labor Convention (MLC) regulations.
  • Wear Personal Protective Equipment (PPE) and follow safety protocols.
  • Maintain professional grooming standards per Vikings Image and Uniform Policies.
  • Secure company property, particularly during rough weather conditions.
  • Demonstrate flexibility and adaptability, maintaining a positive attitude under pressure.
  • Stay knowledgeable about ports of call, shore excursions, and shipboard activities.
  • Support achieving Restaurant Department KPIs (quality and financial goals).
  • Follow safety and security policies, participating in fire prevention and evacuation drills.

Qualification (Your Profile)

  • Minimum 3 years of experience as a Restaurant Manager or similar position in a premium hospitality environment.
  • Previous shipboard experience is required.
  • Fluent in English excellent verbal and written communication skills.
  • Ability to speak additional languages is an advantage.
  • Strong leadership and training skills, with experience in managing multi-cultural teams.
  • Flexible, stress-resistant, team player, with a strong work ethic.
  • Advanced administrative skills, including proficiency in PC-based databases, spreadsheets, and word processing.
  • Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
  • Strong knowledge of Public Health and Sanitary Policies.
